Our friends bought a Alfa Gold 5th Wheel that had been completely redone inside. The couple they bought it from had tried to make the interior look like a cottage. They had added wainscoting and chair rails in the slide out dinning area & kitchen, changed the wallpaper to a cheery flower print and had new chairs to match. Painted the kitchen cabinets white and added new cabinet doors with bead board look. They removed the carpet and put down hardwood flooring to match the cottage feel.
The living area was also updated to compliment the kitchen & dining area. New recliners and matching sofa sleeper. Shutters for the windows.
It was very well done and took away the RV look. Looked more like a small farm cottage inside.
We've added storage areas on the inside. Anywhere I could put a little cabinet or shelf to give us more spots for stuff. We took a coat closet by the door and added shelves, to hold all of the small appliances, my wife says she can't live without.
Our books go on a shelf attached at the inside top lip of the slideout. I have a long bungy cord to hook over them when travelling. Just have to make sure the shelf is fastened well, to handle the weight of the books while travelling.

Over the years that we have been RVing I have done remodels for people in all kinds of RVs and as long as it is structually possible it can be done. You have to be real careful about balance to RVs. You never want to load one side up over the other. Believe it or not RVs are designed to balance so you never want to through that balace out. By putting heaver furniture than the RV was designed for to the back can greatly effect the pin weight. So be sure you run these numbers before you make too great of a weight distribution change.
